The iPhone and iPod Touch have an integrated timer you can use to automatically turn Pandora off after a set period of time:

Tap the Clock app
Tap Timer
Select a time
Tap When Timer Ends
Tap Stop Playing

This will sleep your Pandora app if it is running.
